Almond Bunny Pancake Bites

Easter is such a special time and I love the feeling it brings every year. It’s almost like a new start, the weather gets better and everyone just seems happier, which is always a good thing.

One way to keep the family happy this Easter is to whip up some pancakes for breakfast. But these can’t be any pancakes, oh no. Step forward the bunny pancake bites. How cute are these?

These bites are perfect for little ones and can be loaded with fruit and yoghurt or you could even take them on an Easter picnic. They are the perfect size for little chubby toddler hands too. My little girl, Edith loved these! Check out the recipe below. 

Bunny Pancake Bites

Makes 20, plus leftovers pancake pieces 

250g ground almonds, I ground my own from Graze

50g plain flour

1 tbsp honey

3 tbsp milk (use your favourite)

1 tbsp oil, for frying

1. Combine all the ingredients and whisk into a smooth batter. The batter should be pourable but not too thin.

2. Gently heat the oil in a pan and lightly fry the pancakes until golden brown.

3. Take a bunny cutter, I used a Miffy one, and cut out the bunnies.

4. Serve with yoghurt and berries (or mini eggs, it is Easter after all!)
